African and Dutch influences were added to the melting pot with the introduction of the slave trade and have influenced the very distinct way we as a people balanced, blended and created a cuisine, which is like none other.

Because the islands are multi-cultural there are distinct regional differences in the authentic cuisines of the Caribbean. It is said that one whiff of a west Indian kitchen and you will be seduced for life. That is the passion of the Caribbean cuisine.
